Pancakes aren't the healthiest food--we all know it. Especially when you drown them in syrup and butter. I do enjoy them from time to time, but for the most part, I try to stay away! But these yummy oat cakes are a great alternative. They are egg free, flour free, and don't contain any added sugar, just some fruit and a little honey for sweetness. Try these for breakfast tomorrow!
You'll need:
1/2 cup quick cook oats
1/2 tbsp. honey
1/4 tsp. pure vanilla extract
1 very ripe banana
1/4 tsp cinnamon
1 tbsp. chia seeds
handful of frozen blueberries (you could use any berry)
In a mixing bowl, mash the peeled banana with a fork until it is smooth. Then add oats, honey, cinnamon, chia seeds, and vanilla. Keep mashing until all ingredients are mixed together. Spoon batter onto a skillet over medium-low heat, forming pancake-like patties. Cook each side for a few minutes, or until both sides are golden brown.
Note: The oat cakes are a little tricky to flip because they don't solidify like a pancake does. Make sure to use a large spatula and flip them quickly. If the cakes fall apart when you flip them, just mold them back together and continue cooking.
These cakes had so much flavor that I did not top them with anything, but you could add a little vanilla Greek yogurt on top or some pure maple syrup for a little extra sweetness.
