Day 3 Breakfast: Caprese Grilled Cheese

Breakfast doesn't have to be oatmeal and eggs... Spice things up in the morning with this caprese grilled cheese!


2 slices of whole grain bread
2 thin slices of part-skim mozzarella cheese (It's a little expensive, but so worth it!)
1/2 cup fresh, organic spinach, roughly chopped
2-3 large slices of tomato
1/2 tbsp. olive oil
fresh chopped basil (however much you like, I used about a tablespoon)
dash of ground black pepper

Place 1 piece of bread in a skillet on medium-low heat. Place 1 slice of mozzarella on the bread. The layer on the other ingredients. Put the other slice of cheese on top, followed by the second slice of bread. Let each side cook until the bread is golden brown and the cheese is melted.

For some extra veggies, you could add some sliced red onions or go a little heavier on the spinach and tomatoes.

Note:  If you layer the mozzarella in the middle of the sandwich, it probably will not melt.
