Pumpkin Pie Sweet Potato Mash



Forget the butter and brown sugar, this sweet potato mash is full of flavor (tastes like a Thanksgiving favorite!) with a fraction of the fat. (This recipe yields 1 serving.)

You'll need:

1 small sweet potato
1 tsp. pumpkin pie spice
1 tsp. ground cinnamon
1/4 tsp. pure vanilla extract
1/2 tbsp. pure maple syrup
1/2 tbsp. honey

Soak the sweet potato in water for about 60 seconds. Then wrap it in a paper towel and cook on the 'baked potato' setting in the microwave. (You could actually bake the potato or boil it, but it takes much longer.)  After it's done cooking, remove the peel.


Place the peeled potato in a bowl and add the honey, maple syrup, vanilla extract, pumpkin pie spice, and cinnamon.


Mash the sweet potato with a fork until you reach the desired texture. Drizzle a little extra maple over the top when you serve it.
