Roasted Parmesan Hummus Zucchini Bites



I love zucchini, but it can be pretty bland.  So today I dressed up this yummy vegetable with some parmesan cheese, garlic, and creamy hummus.  All I have to say is that I will absolutely be making this again... Yum!

You'll need:

1 medium zucchini
dash of pepper
1 tsp. garlic salt
2 tbsp. parmesan cheese, shredded
3-4 tbsp. hummus
1 tsp. olive oil (Make sure not to use too much or your zucchini will be mushy.)

Cut the ends off of the zucchini.  Then cut the zucchini into quarters.  Drizzle the olive oil over the zucchini.  Sprinkle garlic salt and pepper over the top and then add the parmesan cheese.


Bake for 15 minutes at 400 degrees. After baking for 15 minutes, broil the zucchini for about 5 minutes or until the cheese is golden brown. Remove from oven and slice into bite size pieces. While still warm, spread hummus on the zucchini bites. 


These zucchini bites are great as a side dish but are also a perfect appetizer! Enjoy :)
