I. LOVE. STUFFED. FRENCH. TOAST. Seriously. It's so good. But it can really pack on the pounds if it's loaded down with syrup, butter, and other fattening ingredients. So instead of having peanut butter toast this morning, I decided to make peanut butter banana stuffed french toast. It was so yummy, and just under 300 calories!
For One Serving You'll need:
2 slices of bread (I used Nature's Own Whole Wheat)
3 tbsp liquid egg (Or you can use 1 whole egg, it will just be about 30 additonal calories)
1 tbsp cinnamon
3 tbsp skim milk
1 small banana
2 tbsp of prepared PB2 (2 tbsp PB2 mixed with 1 tbsp water)
In a wide, shallow bowl, combine eggs, milk, and cinnamon. Whisk together. Quickly dip each side of bread in the mixture and place in a skillet over medium heat. (Don't let the bread sit in the mixture, you don't want it to become so soggy that it won't cook through.)
Cook each side of bread for about 3-5 minutes, or until golden brown. While the bread is still in the pan, spread PB2 on both pieces of bread (on the side facing up). Then slice 1/2 a banana on top of the bread. Remove both slices of bread from the pan.
Making a sandwich with the french toast by placing the bread (without the bananas) on top of the other slice (with the PB2 side down). Slice the rest of the banana as garnish, or save it for later.
You can drizzle a tablespoon of honey over the top for about 30 extra calories.
